- 3TBS. butter (I use Olive oil)
- 3 Cloves of garlic, crushed
- 1 TBS. Garam Masala
- Cayenne Pepper to your taste
- 2 Medium Onions, diced
- 2 Medium Potatoes, diced
- 3 Carrots, chopped
- 1 large can of diced tomatoes
- 2 Cups cooked red lentils

Heat butter over medium
heat. Add garlic and cook until just fragrant (about 30 seconds).
Add onions, and cook until soft.

Add Spices and stir to
combine.

Lower heat. Add potatoes and
carrots. Cover and cook until they are soft.
4.
Add the tomatoes and
lentils., simmer for 5 minutes while stirring occasionally.
serve over basmati rice
